Ingredients

  • 1 (tablespoon) lemon juice (taste)
  • Pinch (as needed) ground ginger
  • 2 1/2 (tablespoon) honey
  • 1/4 (cup) butter
  • 1 (pound) carrots (sliced)

Directions

  1. Bring a pot of water to a boil. Add carrots and cook until tender but still firm, about 5 minutes. Drain.
  2. In a large skillet over low heat, melt butter with honey. Stir in ground ginger and lemon juice. Stir in carrots and simmer until heated through.

    Family loved this one, but it had a bit too much honey for me. However, I did use a thick, raw honey so that's why it may have been a little overpowering. Will definitely make again

    This was so yummy and came together quickly. I would reduce the butter by at least half because I felt it was a bit much.

    I'll normally use 1/4-pound of butter for about four really large onions, so I'd probably cut back on it here, too. This is generally the way I do carrots, though. I love the ginger!

    Awesome! I had an overrun of carrots, and I was wondering what to do with them, and this was perfect. I added more ginger for a stronger taste, but other than that, it was awesome!

    delicious! I have been looking for a new way to introduce more carrots into our dinners for my family. this helps with the variety, i either roast them, steam them or honey ginger them, now. :)
