Ingredients

  • 2 Garlic Clove, minced
  • 6 (slice) Bacon
  • 1 Onion, chopped
  • 4 (teaspoon) Bacon Drippings
  • 4 (tablespoon) Garlic Salt
  • 3 Russet Potato

Directions

  1. Peel potatoes, and cut into an approximate 1/2 inch dice. Rinse well to get most of the starch out, and place in cold water.
  2. Par boil (just until water comes to a boil), and drain potatoes. Meanwhile- Fry bacon until crisp, and remove from pan.
  3. Sweat onion and garlic for approximately 5 minutes. or until onion becomes slightly translucent. Add drained potatoes to pan.
  4. Fry for approximately 20 minutes or until potato cubes become brown and crusty. Seasoning half way through with salt.
  5. To serve- Garnish with small amount of garlic salt (try Mrs Dash or whatever your favorite is!)

  • Yummy! This is what we call "river taters"! We make 'em on the bank when we fry the fish we just caught! Needs no sauce and certainly is a dinner side dish, IMO! :o)

    my kids live this one. I make this dish for breakfast just add some eggs to the mix. just like my mom used to make. we called this dish the farmers breakfast.

    I made this last night. Didn't have garlic salt and didn't want to add 4 tablespoons of salt! Just did a couple of sprinklings of seasoning salt. The whole family loved it. We have sirloin steak and brussel sprouts with it.

    Hubby loved it, didn't have onions so I used chopped dried onions instead and it worked just fine. A little to salty, will probably reduce in salt. Keeper!!
