Ingredients

  • 1/4 (cup) Cooking Sherry
  • 1 (cup) Milk
  • 1/2 (teaspoon) Salt
  • 1/4 (teaspoon) Pepper
  • 1/2 (cup) Onions, chopped
  • 6 (tablespoon) Butter
  • 3 (pound) Russet Potatoes
  • 3/4 (cup) Mozzarella Cheese, shredded
  • 3 (tablespoon) Chives, minced
  • 4 slices Bacon, cooked and crumbled
  • 1 (cup) Cheddar Cheese
  • 1/2 (cup) Sour Cream

Directions

  1. Peel the potatoes & cut them into halves or quarters, depending on size.
  2. Put in a large pot of water with a pinch of salt. Bring to a boil, then cook approximately 20 minutes until the potatoes are tender.
  3. In small pan, heat the milk and 4 tablespoons of the butter. Cook until melted & warm.
  4. In separate pan, sauté the onions in remaining 2 tablespoons of butter until caramelized to a golden brown. Add the sherry to the pan & sauté another 2 minutes until liquid evaporates.
  5. Drain potatoes. Add the milk/butter mixture & start mashing. Season with salt & pepper, then add onions.
  6. Fold in the mozzarella cheese.
  7. Remove from the heat. Serve and top with bacon, cheddar cheese and sour cream as desired.

    As a rookie cook, I messed up when I followed the recipe and added FOUR cups of milk. Great flavor, just ended up with soup instead of mashed potatoes

All the recipes here on Food on the Table are all chef approved however, it looks like this one has a few typos. Thank you for pointing these errors out to us.     I didn't add the cooking sherry since I didn't have any, but my husband said it was the bacon and chesse that made the potatoes really good. I'll definitely make these again, but I didn't know where to add the sour cream. Thank you for changing up plain mashed potatoes.

    @Alisa~ The sour cream in this recipe is supposed to be used as a topping for these potatoes. However, when I make mashed potatoes I like to mix in some sour cream to make them extra smooth, rich and creamy!

    I baked the potatoes with oil and kosher salt on the outside and smashed them skins an all then followed the directions except I added a bit of sour cream to the mash like Chef Heather suggested. Very good!!

    Served with filet mignon au poivre. Was really good, I am going to double the onion and wine pice next time as I wanted more! I also added a bit extra milk and butter than described to potatos to make creamier
