Warm Avocado Salad With Spicy Chorizo

Ingredients

  • 4 (tablespoon) olive oil
  • 1 (teaspoon) sugar
  • 2 (tablespoon) balsamic vinegar
  • 8 (ounce) cherry tomatoes, halved
  • 1 (pound) chorizo sausage, sliced
  • 1 (large) avocado, halved and sliced
  • 8 (ounce) salad greens
  • (to taste) salt and black pepper

Directions

  1. Heat 1 tablespoon of the oil in a large non-stick frying pan. Add the sausage and fry for 6-8 minutes, until crisp, brown and cooked through.
  2. Gently toss the avocado, salad greens, tomatoes, sausage and dressing. Serve immediately. Optional: Top with croutons.
  3. Mix thoroughly the remaing olive oil, balsamic vinegar, sugar, and season with salt and pepper to form dressing.

    Hubby rates this an 8. I wasn't able to find good chorizo so I used the melt-a-way kind and added a couple of chicken sausages for texture. It was filling and tasty. Would probably make again with different sausage or better chorizo.

    This is a wonderful simple salad, perfect for summer! To dress it up a bit, try grilling your sausage, adding some grilled corn, or topping with some French-fried onions!

    I made this as the main dish. The chorizo was just too spicy for us. My husband liked it, though, and just said we needed to drink milk with it.

    @Anonymous- This really is a fantastic salad! Try making it again and use a different sausage. Some Italian sausage, chicken sausage, or even bacon would go nicely.
