Ingredients
- 4 (tablespoon) olive oil
- 1 (teaspoon) sugar
- 2 (tablespoon) balsamic vinegar
- 8 (ounce) cherry tomatoes, halved
- 1 (pound) chorizo sausage, sliced
- 1 (large) avocado, halved and sliced
- 8 (ounce) salad greens
- (to taste) salt and black pepper
Directions
- Heat 1 tablespoon of the oil in a large non-stick frying pan. Add the sausage and fry for 6-8 minutes, until crisp, brown and cooked through.
- Gently toss the avocado, salad greens, tomatoes, sausage and dressing. Serve immediately. Optional: Top with croutons.
- Mix thoroughly the remaing olive oil, balsamic vinegar, sugar, and season with salt and pepper to form dressing.
