BLT Salad

Ingredients

  • 1 (10 ounce package) Romaine Lettuce, chopped
  • 4 (cup) cherry tomatoes, halved
  • 3 (tablespoon) red wine vinegar
  • 12 (slice) bacon, thick sliced chopped
  • 4 (slice) Italian Bread, 1 inch thick
  • 3/4 (cup) mayonnaise
  • salt and pepper, to taste

Directions

  1. Adjust oven rack to middle position and heat oven to 475 degrees.
  2. Spread 1/4 cup mayonnaise over both sides of bread slices and transfer to baking sheet.
  3. Bake until golden brown, 8 to 10 minutes. Let cool 5 minutes, then cut into 1-inch croutons.
  4. Cook bacon in large skillet over medium heat until crisp, about 8 minutes.
  5. Transfer to paper towel-lined plate. Discard drippings.
  6. Whisk remaining mayonnaise and vinegar in large bowl.
  7. Add bacon, tomatoes, lettuce, and croutons and toss to combine. Season with salt and pepper.

    Good salad. That said, I used only 1T red wine vinegar; we don't like our salad dressing with too much vinegar. This was a nice change from a "regular" salad. I'll make it again!

    Really good! My younger kids (6 and 3) didn't like it too well. They mainly picked out the bacon. But everyone else enjoyed it. I added a bit of colby Jack cheese to it as well since we like our BLT's with melted cheese! =o)

    This recipe can be altered to make a great hors d'oeuvre or appetizer.
    16 to 20 cherry tomatoes
    1 pound sliced bacon, cooked and crumbled
    1/2 cup mayonnaise
    1/3 cup chopped green onions
    3 tablespoons grated Parmesan cheese
    2 tablespoons snipped fresh parsley
    Directions
    Cut a thin slice off of each tomato top. Scoop out and discard pulp. Invert the tomatoes on a paper towel to drain.
    In a small bowl, combine the remaining ingredients. Spoon into tomatoes. Refrigerate for several hours. Yield: 16-20 appetizer servings. I've served this at parties and everybody LOVED it! Try it for your holiday entertaining!

    @Tonia, with 1 pound of bacon the calorie count would about approximately 750 calories per serving. You could cut this back by using low fat mayonnaise and less bacon. FYI, there are about 70-90 calories per slice of bacon.

    Thanks for the great ideas...I have a wine party coming up I need to bring a couple of apps to. I think this would be great with cream cheese instead of mayo.

    @Anonymous- You could certainly use cream cheese as a substitute for all or part the mayo in this recipe, or you could also use sour cream or Greek yogurt.

    this was absolutely phenomenal! loved it and so did my boyfriend next time gonna try using coleslaw sauce on the bread instead of mayo sounds weird but i think it would be great! also used turkey bacon as well. made the meal complete with some boneless skinless bbq chicken breasts. lots of play room in the recipie
