Pasta with Fresh Tomatoes

Ingredients

  • 1/2 (teaspoon) Pepper
  • 1/2 (teaspoon) Kosher Salt
  • 3 (tablespoon) Olive Oil
  • 12 Basil Leaves (torn into smallish pieces)
  • 4 Garlic Cloves (minced)
  • 1 (pound) Tomato
  • 1 (pound) Pasta

Directions

  1. Cook pasta according to package directions.
  2. Remove seeds from tomatoes and chop roughly.
  3. Put tomatoes in a bowl with the garlic, basil and olive oil - season with salt & pepper.
  4. Drain pasta, add to bowl and toss well with tomato mixture.
  5. Serve with shredded parmesan cheese.

    yeah...def 1/2 lb i made a recipe on here once...baked molasses chicken...my grocery list called for what i thought to be 13 lbs of chicken....needless to say it was 1 3 lb chicken....LOL

    That's hilarious, Meagan! Dana, good catch on the tomato quantity... (Just for me, I'd probably use somewhat more than 1/2-pound of tomato, anyway, since I'm sure I'd use more than that just even making bruschetta for five people!) ;-)

    @Meagan- Thank you for pointing this typo out to us. I agree with Donna that I would use more than 1/2 a pound of tomatoes in this recipe. I have modified this recipe to show a more accurate amount.

    Good base recipe. I would add more tomatoes and I doubled the basil, pepper and garlic. The recipe as-is needs just a bit of kick.

    You could sweat some onion and garlic to add to this to make it more flavorful. Also, cherry tomatoes would be great in this!

    I love recipes like this one! It makes dinner so easy. I bake the largest turkey I can get and cut it into cubes and freeze it for easy adding to this type of recipes. So nice to have when I forget to thaw meat. If you have a garden with garlic, basil, and tomatoes this recipe is very easy on the budget. Thanks for another great recipe.
