Ingredients

  • 1/2 (cup) Red Bell Pepper, chopped
  • 1/2 (cup) Frozen Peas
  • 3/4 (cup) Carrot, julienne-cut
  • 1 (cup) Mozzarella cheese, shredded
  • 1/2 (cup) Italian dressing
  • 1 (cup) elbow macaroni

Directions

  1. Cook macaroni as directed on package; drain. Rinse with cold water; drain again.
  2. Mix dressing in large bowl. Add cheese, carrots, peas, peppers and macaroni; mix lightly.
  3. Cover. Refrigerate at least 30 minutes or up to 24 hours before serving.

    I also doctored this recipe. It just seemed unfinished. We added green onions, a little bit of mayonnaise, salami, and olives.

    hey....u mean d green peas r2b left uncooked???
    mayb i wil try to just give them a quick boil in micro....not very sure but still worth a try....

    @Anonymous, the green peas are blanched (put in boiling water briefly) prior to freezing. So, they do not need to be cooked prior to adding.

    Didn't like the peas. Other than that it was good. Used whole wheat pasta.
