Ingredients

  • 2 (cup) cooked rice
  • 1 (teaspoon) ginger
  • 2 (tablespoon) soy sauce
  • 1/2 (cup) brown sugar
  • 1 (20.0 ounce can) pineapple (slices in heavy syrup)

Directions

  1. Pour syrup from the can into a sauce pan. Bring to a boil for approximately five minutes.
  2. Lower heat and stir in brown sugar untill it disolves completely. Add ginger and soy and allow to sit on very low heat to keep warm.
  3. Place pineapple rings on the grill and cook for about four minutes on one side and one minute on the other side. ( you can broil them in the oven, but you should baste the rings with the sauce before broiling to help pinapple turn golden brown) place pinapple rings on top of rice, pour sauce over rice.

    General consensus in our household is that the pineapple should have been drained and added to the rice shortly before being cooked.

    It's also REALLY hard to find ANYTHING in "heavy syrup" anymore

    That's definitely a good thing, finding fewer foods packed in heavy syrup! :-) I'm not sure I get your comment about the pineapple, though. Are you saying you think the pineapple should have been mixed in with the rice before the rice was cooked?

    Right before the rice was done, actually - we ended up with crushed pineapple so that's probably why I feel this way - but right before the rice is done cooking, so it can get a LITTLE of the pineapple flavor and get it warm and soft but not TOO soft.

    i LOVED this recipe :) i cooked the rice in a pan all by itself and then used the sauce to drizzle over the rice and put the pineapple on top :) it was awesome :)

    That does sound good. I'm with you, Meagan, about drizzling the rice with sauce--I like mine like that no matter what kind of sauce it is, and it's good in case you've got kids who only like theirs plain... @Jill, I hope that doesn't mean you tried it in your rice cooker!

    I'm going to use less brown sugar when I make it. My doctor said that women shouldn't eat more than 120 gm of carbs per day in order to prevent diabetes and weight gain, especially in the belly area. So, that's just 40 gm of carbs, 3 times a day. Some brands of bread are 29 gm of carbs per slice!

    I substituted chunk pineapple, it worked fine using pineapple juice that wasn't heavy syrup.

    The family was skeptical but loved it. I used brown rice. I felt it was too much ginger for me. Next time I think I'll use half of it. Overall, very happy with it.

    If you're looking to lose or maintain weight with less carbs, perhaps a recipe with brown sugar and syrup pineapples is the best way to do it. For a healthy alternative maybe try fresh pineapple, ginger, corianger (Americans: cilantro) and shaved coconut? yum!
