Ingredients

  • 1/4 (teaspoon) salt
  • 1 cinnamon (stick)
  • 1/2 (cup) water
  • 1/2 (cup) coconut milk (unsweetened)
  • 1 (tablespoon) unsalted butter
  • 1 (cup) long-grain rice

Directions

  1. Rinse rice in a sieve under cold running water 2 to 3 minutes, then drain well
  2. Melt butter in a 2- to 3-quart saucepan over moderately high heat
  3. Add rice and cook, stirring constantly, until it becomes opaque, about 3 minutes
  4. Stir in coconut milk, water, cinnamon, and salt and bring to a boil
  5. Reduce heat to low and simmer, covered, 20 minutes, then remove from heat and let stand, covered, 5 minutes
  6. Discard cinnamon stick and fluff rice with a fork

    This was delicious. My boyfriend is from Africa and said it tasted like rice his mom used to make. It's a great twist on a standard side dish. It livened up the meal! (I served it with the apple & raisin stuffed chicken)

    This was delicious! I've recently had to eliminate soy and dairy from my diet and this was an excellent option. I used a soy/dairy free margarine in place of butter and it worked great. The only suggestion I might have would be to add a half cup more water to get the rice a little more cooked. It was great as a side dish and I had the leftovers the next morning for breakfast--add a little vanilla rice milk, honey and reheat and voila! A yummy treat.

The only suggestion I might have would be to add a half cup more water to get the rice a little more cooked.     @Lindsey, perhaps you would enjoy this dish more with a little lime zest and/or chili flakes added. I also recommend that it be served as an accompaniment to an Indian or Thai main dish.

    This was so good! I served it with the Chicken Satay found on this website and edamame. I didn't have a cinnamon stick so I was considering using ground cinnamon but decided against it. So good anyway. I look forward to making this again!

Also for future reference Anna, if you do not have a cinnamon stick you could substitute 1/4 teaspoon ground cinnamon or ground all spice for this recipe.

    Loved it! Hubby is not a fan of coconut milk but really liked the dish. Added 1/4 tsp. of Cinnamon and liked the slight hint of it. Would recommend more liquid though as it stuck to the bottom of the pan and had some uncooked rice in it.

    I found that this really had NO flavor what so ever...I even added a bit of lime zest to it as I paired this with the pinacolda porkchops found on this site...I think if a touch of sugar was added along with more liquid this would turn out awesome

    This was so good! I didn't have a cinnamon stick so I just used ground cinnamon instead. I wish it had a bit more coconut flavor. I used lite coconut milk which may have been the issue, but overall I loved it and I will be making it again.

    My family all loved this dish. My toddler loves it especially. A quick treat that makes you look like a gourmet even when there's nothing in the cupboards but cinnamon sticks, rice and a can of coconut milk, lol
