Ingredients

  • 1/2 (cup) cheddar cheese, shredded
  • 3 (slice) bacon
  • 1 (8.0 ounce can) tomato soup
  • 1/3 (cup) water
  • 2 (cup) white rice, uncooked

Directions

  1. Cook the rice according to package.
  2. Cook bacon in another skillet, pat dry and break into pieces.
  3. When rice is done add water, tomato soup, cheese and chopped up bacon.
  4. Stir and serve.

    Shocking my family and I really liked it. Not a fan of tomato soup, but the bacon and cheese made it very tasty. Next time I will keep the soup,change the cheese to a mexican blend cheese and add canned green chiles for taco night!

    @Kim~ Hi this is Chef Heather at Food on the Table. I am happy to hear that your family liked this! Great suggestion to add canned green chiles and serve with tacos! Next time if you don't want to use the tomato soup you could always substitute an 8 ounce can of tomato sauce for better flavor.

    I served this under stuffed peppers and it was great. I added a little bit of cooking sherry which added a little extra flavor to it. It was super easy to make and will make again

    @Kathy- Getting perfectly fluffy, yet slightly sticky rice can sometimes be challenging but here are a few tricks: make sure you have enough water but not too much. Most people do 1 cup of rice to 2 cups of water but I like to add about 1/4 cup more of water. Combine the rice, water (or you could use vegetable/chicken broth, coconut milk, etc. as a substitute for the water for more flavorful rice) and a drizzle of olive oil in a medium sized heavy-based pot (this helps prevent burning) and bring to a boil. Boil for 1-2 minutes then reduce the heat to low and cover with a tight fitting lid. Let rice simmer over low heat for 15 minutes. After 15 minutes remove pot from heat and lit sit with the lid on untouched for 5 minutes. After resting for 5 minutes fluff rice with a fork and season as desired.
