Shrimp with Basil-Garlic Butter

Ingredients

  • 1/2 (cup) unsalted butter (cold unsalted butter cut into pieces)
  • 1 (tablespoon) fresh lemon juice
  • 1/3 (cup) dry white wine
  • 2 (teaspoon) minced garlic
  • 1/2 (teaspoon) dried basil
  • 1 1/2 (pound) medium shrimp, peeled and deveined

Directions

  1. Preheat oven to 350°F
  2. Season shrimp with salt and pepper
  3. Heat 2 tablespoons butter in a large nonstick skillet over moderately high heat until hot but not smoking and sauté shrimp 1 minute per side
  4. Transfer shrimp to a baking dish and bake in middle of oven until just cooked through, about 7 minutes
  5. While shrimp bakes, add garlic to skillet and cook, stirring, over moderate heat 15 seconds, then stir in wine, and lemon juice.
  6. Boil, stirring occasionally, until liquid is reduced by two thirds
  7. Swirl in remaining butter and basil over low heat and season with salt and pepper
  8. Serve shrimp with sauce

    I was rushed and lacking time to actually have a good sit-down dinner, so I didn't actually make any sides to go with it this time. Otherwise, I would have most likely made either a simple salad with vinaigrette or the orzo salad that you have here on this site.

    @Jill, I like the idea of peas or broccoli. Because of the lemon in the recipe, asparagus would be a great side as well. @Vanessa, I LOVE green onions and use them frequently as a garnish! Good suggestions, y'all!
