Ingredients

  • 2 Medium Potatoes
  • 2 tbsp Vegetable Oil
  • 5 cups Water
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 Bushel Kale
  • 1/2 lb Sausage

Directions

  1. Peel and chop potatoes. Combine with vegetable oil and water. Cook for 20 to 30 minutes or until potatoes are tender. Remove potatoes and reserve liquid.
  2. Mash potatoes through a sieve and return to potato liquid. Add salt and pepper and simmer for 20 minutes.
  3. Wash kale discarding all tough leaves and cut into shreds. Add to potatoes and cook for 25 minutes. Add sausage. Simmer gently for 5 minutes.

    Used chicken broth instead of water; used a stick blender to blend the potatoes right in the pot; doubled sausage; I also found that you don't need to cook this nearly as long as it calls for - do the potatoes until they are tender, brown sausage (we used a rope sausage) rounds ahead of time, add the sausage and kale and simmer for about 5 minutes and you're done!
