Ingredients

  • 2 (bunch) Spinach
  • 2 (tablespoon) olive oil
  • 1 (tablespoon) butter
  • 2 (clove) garlic, chopped
  • (to taste) salt and pepper

Directions

  1. In a large saute pan heat oil and butter. Add spinach and let cook one minute. Add garlic, salt, pepper, and turn spinach. Let cook 2-3 minutes, or just until spinach wilts (if pan is too dry, add 2 tablespoons of water or chicken stock). Serve immediately.

    This is the only way my family will easy spinach. I omit the butter & only use olive oil. I saute my garlic first with olive oil so the oil infuses with garlic then add my spinach & turn ad needed.

    @Anonymous, another great suggestion is to add a little shallot or onion to the pan and sweat it before you add the garlic. Then add the spinach and toss until wilted. I also like to add a little acid such as lemon juice, balsamic vinegar or red wine vinegar (just a touch, about 2 teaspoons).
