Ingredients

  • 1/2 (cup) mayonnaise
  • 1/2 (cup) chutney
  • 1 (teaspoon) curry powder
  • 2 (teaspoon) lime zest
  • 1/4 (cup) fresh lime juice
  • 1/2 (teaspoon) salt
  • 4 (cup) chicken breast, diced and pre-cooked

Directions

  1. In a large bowl, whisk together the mayonnaise, chutney, curry powder, lime zest, lime juice and salt. Add chicken and toss with the dressing until well coated. Add more mayonnaise to taste, if desired. Cover and refrigerate until serving.

    I substituted mango chutney for the chutney and didn't care for it too much. I will try the regular chutney and see how it tastes. It was difficult to find chutney.

    I used Greek yogurt (0% Fage) instead of mayo and a little less chutney and it was DELICIOUS! Love how easy this was.
    I also used rotisserie chicken for this instead of processed precooked chicken.

    @Christina - chutney is a S Asian/middle Eastern condiment so perhaps in the Indian food isle? There's also many recipes out there to make your own which would be fun.
