Ingredients

  • 1 (pound) ground beef
  • 1/2 (medium) onion, chopped
  • 1 1/2 (teaspoon) Mexican spice blend (cumin, paprika, cayenne, garlic)*
  • Pinch (teaspoon) salt and black pepper, to taste
  • 1 (10.5 ounce can) diced tomatoes with green chilis, drained
  • 1 (16.0 ounce can) refried beans
  • 2 (10.0 ounce can) enchilada sauce
  • 4 (12 inch) flour tortillas, warmed
  • 8 (ounce) Mexican cheese blend, shredded

Directions

  1. Preheat oven to 350 degrees. Crumble ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add onion, and cook until translucent. Drain grease, and season with salt, pepper and Mexican spice blend. Stir in the diced tomatoes with green chilies and refried beans until well blended. Turn off heat, but keep warm.
  2. Place a warmed tortilla on a plate, and spoon a generous 1/2 cup of the ground beef mixture onto the center. Roll up tortilla over the filling. Spoon a generous amount of the sauce over the top, and sprinkle with cheese. Repeat with remaining tortillas. Place in oven-proof 9x13 inch casserole dish. Bake at 350 degrees until cheese is melted, about 20 minutes.
  3. *Note: Taco seasoning, beef fajita seasoning, or equal amounts of the dried spices listed above can be substituted for the Mexican spice blend..

    we liked it! changed the recipe a bit tho. add a packet of taco seasoning to the meat before adding the beans. i also put my mexican rice directly on the burrito! pretty tasty!! :)

    These were pretty good. It was nice having the lettuce/tomato inside. I'm thinking of trying a can of spicy chili next time with or without beans. Or maybe just adding a little chili powder or cayenne pepper for a little flavor pop.

    My kids say this is a keeper. I used homemade enchilada sauce, no beans and added twice the amount of spices and cheese to the ground beef. It was awesome.

    Made this for dinner tonight and it was amazing! It made a ton of meat/bean mixture, which will be good for freezing or eating when I work late. (Loved the nacho suggestion!) I added extra spices to the meat- Essence, paprika, and a dash of hot sauce. I love anything spicy!

    Hi Sara! You could easily freeze the whole burrito (minus the sauce). Simply lay out tortillas and divide meat mixture and cheese among them. Roll up in plastic wrap, place in gallon-sized ziplock freezer bags, and freeze. To serve, place one wrapped frozen burrito on a plate and microwave for 1 ½-2 minutes. Using scissors, carefully slice through the plastic wrap along the length of the burrito and discard.

    I actually freeze them with the sauce and cheese (in a glass container) and they reheat great! Our 4yo lives these as long as I don't make them spicy.

    Thanks for your tip Ryan! You could freeze these burritos in a casserole dish for a family style meal as opposed to the individual option I shared! I often use those 8x8 or 9x13 foil pans so that I don't have one of my glass pans tied up in the freezer.     Hi Anonymous! I apologize you had trouble locating the Mexican Spice Blend at your store. I have edited this recipe to include a note with other substitutes for the Mexican Spice Blend which reads: "*Note: Taco seasoning, beef fajita seasoning, or equal amounts of the dried spices listed above can be substituted for the Mexican spice blend." Also, for your future reference, I usually make my own taco seasoning using common ingredients found in any spice cabinet. Here is my 'go-to' recipe:

    Homemade Taco Seasoning

    4 tablespoons chili powder
    3 tablespoons paprika
    3 tablespoons ground cumin
    1 tablespoon onion powder
    2 teaspoons garlic powder
    ¼ teaspoon cayenne pepper
    2 teaspoons dried oregano
    2 teaspoons sea salt
    2 teaspoons black pepper

    Combine all ingredients in a bowl, and mix well to blend. Store in an airtight container until ready to use.

    Note: Use 2 tablespoons to replace 1 package of taco seasoning in recipes
