Bow Tie Pasta with Sausage and Sweet Peppers

Ingredients

  • 1 (pound) Italian sausage, cut into 1/2 inch pieces
  • 2 (medium) green bell peppers, chopped
  • 8 (ounce) farfalle pasta
  • 1/2 (cup) beef broth
  • 1/4 (teaspoon) black pepper
  • 1/2 (teaspoon) salt

Directions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. While pasta is cooking, cook sausage and peppers in large skillet over medium heat until sausage is brown and juices run clear. Drain grease from sausage mixture and return sausage and peppers to the pan. Pour in the broth, season with black pepper and salt, and bring to a boil. Reduce heat to medium and simmer until sauce thickens slightly, about 4 minutes.
  3. Toss pasta with sausage sauce and serve.

    Slight modifications: double the amount of pasta and broth and added corn starch to thicken the sauce. And we got the spicy sausage which added a hint of nice spiciness. We really liked it and will definitely have it again.

Using a flavored sausage is a great way to add extra flavor to this (or any dish) without extra cost. Using cornstarch is a wonderful way to thicken a sauce or you could also use a roux or for a creamy sauce try adding in some cream cheese or half and half or heavy cream.

    I used italian Turkey Sausage to cut down on saturated fat, I'm not sure how there is only one gram of fat in the original recipe, but we loved it!

    @Elizabeth, yes it does look like the nutritional information is off on this recipe. With pork sausage I am thinking this would be around 8-9 grams of fat per serving. However, I am going to forward this recipe onto our nutritionist to review and verify these numbers. But you are right, using turkey or chicken sausage would cut down on the overall fat and calories of this dish.

    Anonymous, since beef broth and sausage have salt in it already, you may need to omit the extra salt called for in the recipe and just season with salt and pepper if needed at the table. Also try using a reduced sodium beef broth to help lower the overall salt content in this dish.

    Didn't have gr pepper. Subbed onion + added frozen spinach at the end. Definitely dont need extra salt. Worked great!

    This was AWESOME! I have picky eater. I did make a few adjustments. First I was cooking for 7. Then instead of bow tie pasta I used a brand from kroger that had a full serving of vegetables in a 4oz serving. (my kids hate vegetables!)I uses sweet italian sausage and hadded cornstarch to thicken sauce. Mixed all together and I didnt have enough for seconds! Everyone wanted more!!! Will definetly make this again and again.

    I don't think you can go wrong with sausage and peppers, and frankly, we used to add sliced potatoes as well (skip the pasta, of course) and have this on crusty bread or sub rolls for sandwiches. We used to love those as kids!
