Ingredients

  • 1 (pound) rib eye steaks
  • 2 (whole) cucumbers, peeled, halved lengthwise and sliced
  • 2 (whole) red onions, halved and thinly sliced
  • 1 (lime) limes, juiced
  • 1/2 (teaspoon) sugar
  • 1 (cup) fish sauce

Directions

  1. Preheat oven to broiler setting. Broil rib eye for 4-5 minutes per side, or to desired doneness. When cool enough to handle, slice into 1/4 inch by 1 inch strips.
  2. In a large bowl, combine the steak, cucumbers, onions, lime juice, sugar, and fish sauce. Stir gently for 5 minutes, or until flavors are well blended.

    Just made this for lunch and it is delicious!!! I did make a few little changes: instead of 1 cup fish sauce I did 2/3 cup fish sauce & 1/3 cup pure sesame oil. I also cooked some Quinoa in a little soy sauce to mix in and make this recipe go a little farther! Thanks for the yummy quick recipe!!!

    I also had to cut the fish sauce with oil, same as Rachel. I also added a splash of rice vinegar. The whole family LOVED this and it was a nice way to get rid of the surplus of cucumbers we have piling up from our CSA.
