Ingredients

  • 4 (5-6 ounce) pork chops
  • (to taste) ground black pepper
  • 1 (tablespoon) olive oil
  • 1 (15.0 ounce can) black beans, with liquid
  • 1 (cup) salsa

Directions

  1. Season pork chops with desired amount of pepper. Select a frying pan large enough to hold all four pork chops in a single layer. Heat oil in frying pan over medium-high heat. Brown pork chops on both sides.
  2. Pour undrained beans and salsa over pork chops. Bring liquid to a boil, reduce heat to medium-low, and cover. Simmer until pork chops are cooked through, about 20 to 35 minutes depending on chop thickness.

    Very good and easy! The family liked it. I served it with baked potatoes and we used the sauce from the pork on them, along with sour cream.

    We really enjoyed this! I used left over white rice with some spices added and served the pork chops and sauce over the rice. I also melted some cheddar cheese on top of the pork chops. Like Daniel, I wasn't sure it would be great, but it was really yummy!

    Easy and good. Should use thicker chops..The thin ones were a little dry

    @Anonymous, I generally cook the thin pork chops about 15 minutes after browning them. The thick ones are always juicier!

    Delicious and simple. I added some chopped bacon and topped it off with pico de gallo. Thought there would be leftovers but we polished it off. Get thick chops. Thanks for this wonderful creation. :)
