Ingredients

  • 4 bone-in pork chops
  • 4 (tablespoon) vegetable oil
  • 1 1/3 (cup) apple juice
  • 1/4 (cup) brown sugar, divided
  • 1 (teaspoon) salt
  • 1/2 (teaspoon) dried rosemary, crushed
  • 1/2 (teaspoon) dried thyme
  • 2 (tablespoon) cornstarch
  • 2 (tablespoon) cold water
  • 3 large tart apples, sliced
  • 1 medium onion, sliced
  • 2 (tablespoon) butter

Directions

  1. In a large skillet, brown pork chops in oil. Add the apple juice, 2 tablespoon brown sugar, salt, rosemary and thyme. Cover and cook for 7-8 minutes or until meat juices run clear. Combine the cornstarch and water until smooth; add to the skillet. Bring to a boil.
  2. Heat butter in a large skillet over medium heat. Stir in remaining brown sugar, apples and onions. Simmer for 3-4 minutes or until apples begin to soften. Add apple juice sauce to cooked apple mixture and serve over cooked pork chops.

    My family loved these! I double the recipe, so I browned them in the skillet, made the sauce, and finished them on the oven. I doubled the apples, but could have done with less, and they seemed bland. Next time, I will double the pan sauce and add it to the apples. Great recipe!

    Would like more specifics on the porkchops. To feed four...I presumed 4 porkchops...(which was more than 1 pound). I thought to change, therefore, the ratio of the apple/onion mix and the glaze/sauce. It was overall a very tasty recipe and so yummy for fall.

    I hope Chef Heather might advise on the pk chop weight and quantity. As mentioned above....I used more...the weight of four bone in pk chops was over two pounds......please advise...

    @ Lisa- Thank you for pointing this out this typo. Here at Food on the Table we strive to carefully proof read, edit, and test our recipes before making them public to the users. But even after checking and double checking sometimes typos still get through. As for this recipe, you are correct that if you are using bone-in pork chops (as the recipe states) four pork-chops will probably weigh more than one pound. However, you could probably get 4 boneless chops for about one pound; and boneless chops would work just fine for this recipe. I have adjusted the recipe to be clearer on the exact pork chops needed to serve 4 people. I have also adjusted the sauce ingredients slightly to make sure there is more than enough sauce. As for other suggestions for this recipe, if you wanted you could add a touch of cinnamon, some fresh sage, some chopped walnuts or pecans, and even a splash of orange juice to build on the flavor profiles already in this dish.     @Anonymous- Cook the apples separately from the sauce as the directions indicate and then toss the cooked apples with the apple juice sauce and serve the cooked apple/sauce mixture on top of the cooked pork chops.
