Ingredients

  • 1 egg
  • 1 (cup) bread crumbs
  • 1/4 (cup) onion, minced
  • 1 (teaspoon) salt
  • 1 (pound) lean ground beef
  • 1/2 (cup) apricot preserves
  • 1/4 (cup) barbeque sauce

Directions

  1. In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into 1 inch meatballs. In a large skillet, brown meatballs in several batches; drain. Transfer to a greased 2-qt. baking dish. Preheat oven to 350 degrees.
  2. Combine preserves and barbecue sauce; pour over meatballs. Bake in preheated oven for 15-20 minutes.

    this was a very easy recipe. I used frozen meatballs that I had made earlier, so I did not use the meatball portion of the recipe. The sauce was very good and both my 4 yer ld and my 2 year old ate them.

    The meatballs and sauce also work beautifully in a crock pot, just as Beth described (with the frozen ones).

    @ Love, when I did this with frozen meatballs, I think they were probably in there for about 4 hours.

    Thank you, Donna. It worked like a charm. I put the raw meatballs in the cooker with sauce on top, set it to low, cooked for 4 hours, and wow - delicious! I also used peach preserves because that's what I already had in the cupboard. Thanks for the great recipe!

    Hi Mary Lyn- Any of those sides would work just fine with this dish. Personally I would lend towards rice, to help soak up some of the sauce, and veggie or salad.     I recommend veggies and a salad. If you have to have a starch, we used to make a different flavor of meatballs (cranberry) served with rice. I just try to stay with fresh/frozen veggies. Dole has a new bag salad that is not like the rest of the bag salads. It lasts a lot longer and is called "Extra Veggies" and they are sealed in with the salad (grape tomatoes, extra veggies or sugar snap peas). I highly recommend them! I definitely want to try this recipe! Did ya'll defrost the frozen meatballs before putting them in the crockpot for 4 hours?

    Kimberly, if the meatballs were frozen raw then they could go directly in the crockpot but I would cook them a little longer; on low for 7-8 hours or on high for 4-5. Just be sure they are cooked through before service. If they were cooked and then frozen, I suggest 3-4 hours on low to be sure they are heated through.

    I was thinking the meatballs that are cooked and frozen like I have used in the past for appetizer meatballs in the crockpot...always a hit!
