Ingredients

  • 1/2 (cup) red bell pepper, chopped
  • 1/2 (cup) zucchini, chopped
  • 1/2 (cup) red onion, chopped
  • 1 (tablespoon) olive oil
  • 8 (9 inch) whole wheat tortillas
  • 1 1/4 (cup) shredded reduced-fat sharp Cheddar cheese

Directions

  1. In a large nonstick pan, cook red pepper, zucchini, and onion in olive oil over medium to medium-high heat for about 7 minutes, or until just tender. Remove vegetables from pan.
  2. Coat the same pan with cooking spray, and place one tortilla in pan. Sprinkle 1/4 cup of cheese evenly over tortilla, and layer 3/4 cup of the vegetable mixture over the cheese. Sprinkle another 1/8 cup of cheese on the vegetables, and top with another tortilla. Cook until cheese melts flipping once. Repeat until all ingredients are used.

    Really easy...simple... good! My 2 year old loved it with the grilled veggies because they were soft enough for him to process. It was a success and there were happy, quiet, eaters all around the table! :)

    I made this tonight but added tomatoes & mushrooms. Also used monterey jack cheese instead of cheddar! It still turned out amazing! Ill definitely be making it again!

    Very yummy! I used yellow and orange peppers instead (for some added color) I added some shredded chicken, it was very good! :o)

    Made this and loved it. Great for on the go and and leftovers. My husband is a meat eater but adores these. Add a bit of organic sweet corn from trader joes and its even better
