Ingredients
- 1/2 (pound) sliced bacon, cut into 1-inch pieces
- 1 (pound) pork tenderloin
- 1/2 (teaspoon) paprika
- (to taste) salt and black pepper
- 1 (cup) whipping cream
Directions
- Preheat oven to 400 degrees F. In a medium skillet, cook bacon until it just begins to brown; about 8 minutes. Drain and set aside. Cut pork into 1-1/2-in slices; flatten slightly with a meat mallet. Sprinkle with paprika, salt and pepper. Place pork in an ungreased 8-in. square baking dish. Sprinkle with bacon and pour cream over pork. Bake 20-25 minutes. Pork should be pink in the middle. An instant-read thermometer should read 140 degrees when the pork is done. Remove pork to plates and pour sauce over the top. Serve.
