Ingredients

  • 1 (pound) ground beef
  • 1 (pound) bow tie pasta
  • 1 (pound) fresh asparagus, cut into 1-inch pieces
  • 3 (tablespoon) olive oil
  • 1/4 (cup) onion, minced
  • 3 (clove) garlic, minced
  • (to taste) salt and pepper

Directions

  1. Cook pasta in boiling salted water 10 minutes or until almost tender. Add asparagus; continue cooking 3 to 4 minutes or until pasta and asparagus are tender. Drain well.
  2. Meanwhile brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes or until beef is no longer pink. Remove from skillet with slotted spoon. Pour off drippings.
  3. Heat oil in same skillet over medium heat until hot. Add onions and garlic; cook 3 to 4 minutes or until tender, stirring frequently. Remove from heat. Add beef; toss to mix. Season with salt and pepper as desired.
  4. Combine beef mixture with pasta and asparagus in large bowl; toss well.

    This dish is extremely plain and had next to no flavor. However, it has the potential to be a great, easy, kid-friendly meal. Retaining a bit of the cooking water from the pasta and adding it back into the completed dish with the juice of one lemon and a generous helping of parmesan cheese makes all of the difference.

    @Meagan- I agree with you, saving some of the starchy pasta water and adding some lemon juice and Parmesan cheese to make a "sauce" sounds like a great addition to this dish. Other things you can do to pump up the flavor is adding a little dried marjoram, oregano, thyme, or Italian seasoning, some fresh parsley, a drizzle of seasoned olive oil or balsamic vinegar, beef broth, or even stirring in some herb cheese (like Boursin) or flavored cream cheese with a little broth/milk/or pasta water to form a sauce.

    A couple of tablespoons (generous ones) of seasoned bread crumbs, freshly grated parmesan cheese or shredded asiago, will give a big flavor punch. But if you feel it's dry this way, you could toss in diced sauteed mushrooms and you'll get more flavor and moisture. Kids may not love the mushrooms, but, hey - "it's what's for dinner" :-). Loved it.

    I was nervous about it being bland so I threw in half a jar of pasta sauce and melted in some sliced american cheese (yeah, my cupboards were bare) and it was...ok. Still a little plain. Hubby liked it, but he's a big fan of hamburger helper. I like Jan's suggestion above breadcrumbs and mushrooms, maybe I'll try that next time.

    This recipe was very good. Of course, after looking at some of these comments, I did spice it up a bit with pepper flakes, butter, and parmesan cheese. My family loved it. I will make it again. It was very easy.

    You could also add Italian seasoning, or just some oregano to add more flavor. I would also add a pinch of red pepper flakes and a touch of butter.

    Made it tonight! Yummy! Did add pasta water, lemon and italian seasoning. Also had some truffle flavored olive oil and added a splash of that. Very yummy!!!

    I added 1 cup starchy pasta water and 1/2 cup parmesan cheese along with some extra seasoning to the mix and it was outstanding!!
