Ingredients

  • 2 (pound) shrimp, peeled and deveined
  • 3 (clove) garlic, minced
  • 1 (tablespoon) dried basil
  • 1 (16.0 ounce package) whole wheat pasta
  • 2 (cup) roma tomatoes, chopped
  • 2 (tablespoon) olive oil

Directions

  1. Cook pasta according to package directions; drain and set aside. Meanwhile, saute the shrimp with garlic in olive oil until they lose their transparency, about 2-3 minutes depending on size.
  2. Add basil and tomatoes, and simmer 5 more minutes.
  3. Serve warm over pasta.

    This was really good and pretty easy after the shrimp were thawed! (I had to cut it in half to serve me and my hubby... and a little to my toddler - who also liked it!)

    I added some Old Bay Spice and sprinkled parmesian cheese on top. It was good but I thought the noodles needed a little more sauce or dressing.

    @Anonymous, you could add a little chicken or fish stock to the pan and drizzle with a little olive oil just before service. Or you could deglaze the pan with a little dry white wine.
