Ingredients

  • 1 (tablespoon) paprika
  • 4 (teaspoon) sugar, divided
  • 1 1/2 (teaspoon) salt
  • 1 (teaspoon) garlic powder
  • 1 (teaspoon) dried thyme
  • 1 (teaspoon) lemon-pepper seasoning
  • 1 (teaspoon) cayenne pepper
  • 1 1/2 (teaspoon) pepper, divided
  • 4 boneless, skinless chicken breast halves
  • 1 1/3 (cup) mayonnaise
  • 2 (tablespoon) water
  • 2 (tablespoon) cider vinegar

Directions

  1. In a small bowl, combine paprika, I teaspoon sugar, 1 teaspoon salt, garlic powder, thyme, lemon-pepper, cayenne and 1/2 to 1 teaspoon pepper; sprinkle over both sides of chicken. Set aside. In another bowl, combine mayonnaise, water, vinegar and remaining salt, and sugar.
  2. Grill chicken, covered, over indirect medium heat for 4-6 minutes on each side or until juices run clear, basting frequently with remaining sauce. Serve with reserved sauce.

    Very spicy! My husband loved it. Next time I make this, I will only spice one side of my chicken to lessen the heat. Very good with noodles and white sauce.

    This is a great cajun spice rub... might use this on fish for fish tacos, or would be great across a big piece of bread and some fresh turkey!!

    Fantastic cajun rub! This would be great on fish, a turkey sandwich, to make cajun cheese bread (to pair with some creamy pasta). I liked the flavor of the basting liquid, but it made a full bowl full. I just ended up brushing the chicken one-time on both sides, which was plenty. Next time I'll make 1/3 of that liquid.

    Loved the seasonings! My boyfriend and I were delighted with the flavor. We did not make the mayo sauce and I used the chicken for blackened chicken tacos. Was superb!

    I made just the chicken tonight & decided to make fried rice with it. My daughter decided she wanted me to cut up her piece & stir it into the fried rice. It was a hit with her :)
