Ingredients

  • 3 (teaspoon) olive oil
  • 4 boneless skinless chicken breast halves
  • 1 (teaspoon) cornstarch
  • 1/2 (teaspoon) ground mustard
  • 1/2 (cup) orange juice
  • 5 (tablespoon) orange marmalade
  • 2 (tablespoon) soy sauce

Directions

  1. Heat olive oil in a large skillet over medium heat. Saute chicken for about 15 minutes, turning once, until juice of chicken runs clear.
  2. While chicken is cooking, mix cornstarch and mustard in small bowl. Stir in remaining ingredients.
  3. Place chicken on serving plate; cover to keep warm. Discard any juices left in the skillet. To make the glaze, pour orange mixture into skillet. Heat to boiling over medium heat, stirring constantly. Boil about 1 minute, stirring constantly, until glaze is thickened. Pour over chicken.

    Anonymous- Thanks for sharing your side dish recommendations with us! You could also double the sauce and add some stir fry vegetables and serve over rice for homemade take out.

    We loved this - we did add Chinese Five Spice Powder, a little salt, and Red Chili Flakes to the sauce, and served it over rice. I think next time I'll also chunk up the chicken beforehand and add some veggies. It was great the next day too!

    Very good sauce. Only thing I did different was to boil it longer do that it was thicker. Yummo!

    Question: Did you all use ground dry mustard, or coarse-ground regular (ie, wet) mustard?

    Hi Anonymous! This recipe is calling for ground mustard powder, not stone ground or coarse ground (wet) mustard. However, either of those, or even some honey mustard or Dijon mustard could be used and would complement the other flavors of this dish.

    This was delicious, but a little sweet for my taste. Stir fried with peppers and udon noodles. It was very tasty :)

    This was a great meal. Super easy and not too many ingredients. Had a nice subtle orange flavor, not too much. Made fried rice and stir fry green beans to go with it. This was a hit at the dinner table.
