Ingredients

  • 1 (7.0 ounce can) whole kernel corn, drained
  • 4 (cup) chicken broth
  • 1 (10.0 ounce can) chunk chicken
  • 1 (15.0 ounce can) black beans, rinsed and drained
  • 1 (10.0 ounce can) diced tomatoes and green chilis, drained
  • 2 corn tortillas, sliced into 1/4" strips

Directions

  1. Mix all ingredients into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.

    I think this soup is better if the black beans are drained and rinsed. That way they don't turn the soup a dark color. Tink, rink my two cents worth.

    Marilyn, the canned chicken should work just fine. But, you could always use any leftover chicken you have from other meals or use rotisserie chicken precooked at the grocery store.

    I always get the big bags of single-portion chicken breasts or tenders from Costco to use in recipes like this--don't like to use canned meat.

    Just made this soup minus tortilla. also used left over turkey instead of chicken. threw everything in a crock pot...came out pretty good!

    this was a very good quick meal. I added some habenero sauce to it to spice it up a bit, and once It was finished, seperately, we added sour cream, cheese, and crunched up tortilla chips, it was wonderful!

    Tried it with canned chicken from costco am trying it with chicken breast which I cooked myself! I added grated jack cheese to top it off! Will report back!

    Cooked this as a last minute meal. It was Great! Served it with Taquitos and it rounded out the meal. We also topped off with condiments in our own bowls according to taste. Sliced Avocado on top was very tasty.

    I've tried MANY tortilla soup recipes, and ordered it from lots of restaurants, and this is by far my favorite. I add some cayenne pepper, garlic powder and onion powder and throw in a bay leaf. I think this is an EXCEPTIONAL recipe that I make often. Its wonderful to have leftovers, as well.

    My version's similar, but I add: half a diced onion, 8 cups chicken broth (instead of four), two jars of tomatoes (canned at home), garlic powder to taste, pepper to taste, and two packets low sodium taco seasoning. I buy rotissorie chicken when it's on sale, shred it, and freeze it for these occasions. Otherwise I cook a whole chicken. This is the perfect recipe for the crock pot and freezer!

    Do you really put the corn tortillas into the soup as it cooks or do you bake the cut tortilla strips and use as a garnish?

    I make a version very very similar to Stefani's for serving at The Community Cafe in Fort Mill, SC. We toast the corn tortillas in the convection oven then put some in the bowl followed by the soup and topped with sour cream and some shredded mild cheddar cheese. Everyone loves it.

    This is a wonderful soup which thickened on its own on a slow simmer. This was a great fast and easy recipe. It worked wonderfully as a last minute idea so chicken was left out and it was still great. Got lots of compliments. Thank you for a great idea.

    @Anonymous- While some tortilla soup recipes have you 'toast' or fry the tortillas and use the crispy tortillas as a garnish; many versions of this soup add the tortillas directly to the soup with the other ingredients as it cooks. This will help the soup thicken and add flavor. So to answer your question, for this recipe you do want to add the tortillas directly to the pot with the other ingredients. But feel free to fry some tortillas up to use as a garnish!

    @Anonymous- To thicken this soup you can let it simmer for a longer period of time, use 1 cup less of the broth, stir in a can of creamed corn, or add 1-2 tablespoons of tomato paste. Another option would be to make a slurry, by mixing 2-3 teaspoons cornstarch with 2-3 tablespoons of water and stir this into the soup to help thicken it.

    It will freeze just fine...but not with the tortillas in it. They will go soft and mushy. Chef Don

    Hi Anonymous! Soup is fantastic freezer meal because it can be kept frozen for up to 3 months. If freezing leftover soup, make sure you allow it to cool completely before freezing it. Also keep in mind that liquids expand when freezing; so use heavy duty plastic containers and leave about half an inch of space at the top.     @Anonymous- I apologize that I just saw your comment about freezing cream based soups. Yes, creamed based soups will freeze just fine, however due to the cream/milk, the soup may separate slightly during the freezing process. To revive your cream based soup if this happens, stir in some additional milk/cream when reheating your frozen soup. Or add in a cornstarch slurry (1/2 tablespoon cornstarch mixed with 3-4 tablespoons water). You can also puree some of your thawed soup mixture and stir it back into the soup as it heats through.
