Ingredients

  • 1 1/2 (pound) ground beef
  • 1/2 (cup) salsa
  • 1 (package) taco seasoning mix
  • 1 1/2 (cup) corn chips, coarsely chopped
  • 1 (large) egg, beaten
  • 1 (cup) Monterey jack or cheddar cheese, grated

Directions

  1. Preheat oven to 375 degrees F. Mix all ingredients, except cheese, together in a large bowl. Place in a meat loaf pan. Top with cheese.
  2. Bake, covered, in preheated oven for 1 hour or until an instant-read thermometer reads 165 degrees F. Slice and serve as meatloaf or serve with nacho chips and top with your favorite cheese.

    I am editing this recipe to keep if from being too mushy. Try it again but this time bake in the oven it will be delicious! Bake at 350 degrees for 1 hour. Or on high in the crock pot for 2-3 hours. Should make it less mushy and much better.

  • Tried to make this tonight with the crock pot directions. After two hours on low the meat was still pink! We couldn't eat it for dinner. :(

  • I remade our half-cooked crock pot version in the oven, but it was still greasy & mushy. I believe that the problem with the recipe is the crushed corn chips. They merely add more grease to the recipe and disintigrate as they get moist. Most traditional meatloaf recipes call for some type of bread crumb. I would suggest rather that using crushed corn chips to try something like cornmeal instead. Hopefully that would cut down on the mush/grease issue and help the loaf hold together better, while keeping a similar flavor. The concept is a good idea--just needs some tweaking.

    we loved it! i used elk burger and it was not greasy or mussy. it is a lean burger so if you use beef go leaner. when i make it next time i well wait to put the cheese on til the end. i have a 5 and 2 years old and they liked it too! :-)

    ditto on the cheese comment above, when added in the beginning it turned out to be a crust by the time the meat was cooked, I ended up having to remove it (came off in one piece) and add a little more

    Just made this with a few deviations from the recipes and had a great turnout! I got the Tex-Mex taste I love on my plate, hubby was pleased to have something different, and the little one had a blast crushing the chips. I used tortilla chips because that is what I had on hand. After mixing the ingredients, I noticed that the texture wasn't quite right, so I added breadcrumbs 1/2 Tbs at a time until the consistency felt right for meatloaf. I also divided the salsa- adding one half to the meat mixture and the other half I spread on top (like how some do ketchup with traditional meatloaf). My last twist was to add the cheese in the last 10 minutes of baking, only using 3/4 cup mixed with an additional 1/4 cup crushed chips for an awesome crispy topping!

    @Lorelei and Regina, those are all very good suggestions. @Anonymous, you could add the cheese near the end of cooking and then you would solve the over cooked cheese. Did you cover the dish as it was cooking? That should solve the cheese issue too.

    I made this last night and it was perfect! I haven't cared for any meatloaf I have made, although I like ordering it from restaurants. But this one turned out perfect. The corn chips really added a nice texture. With some guacamole on the side, this was a fantastic mexican fiesta without a lot of sweat and tears!

    i made this with 2lbs of grnd bf n only 1/3 cp of salsa...DELICIOUS! My 4 n 7 yr olds loved helping crush the fritos:)
