Ingredients

  • 1/4 (cup) oil
  • 2 (clove) garlic, minced or mashed
  • 3 (whole) green onions, sliced
  • 4 (whole) mushrooms, sliced
  • 1 (cup) snow peas
  • 2 (whole) eggs
  • 3 (cup) cold cooked rice (white or brown)
  • 3 (tablespoon) soy sauce, or to taste (sub wheat free tamari for gluten free)

Directions

  1. Heat wok. Add 1 tablespoon oil and heat. Add garlic, green onions, and stir fry until onions are tender. Add mushrooms and snow peas. Saute 2 minutes. Remove vegetables.
  2. Add 1 tablespoon oil and heat. Add eggs. Stir until set. Remove eggs and break into very small pieces.
  3. Add remaining 2 tablespoons oil and add rice. Cook, stirring until heated through. Season with soy sauce. Add vegetables and eggs and toss to mix well.

    My family loved this one! I used wild rice, and didn't really measure the sauce, just did it to taste. I used some soy sauce but mostly bragg's enzymes. I actually like the flavor much more. When I cooked the eggs, I added just a little toasted sesame oil and braggs. I also used extra veggies. I added a bag of frozen peas and carrots. Next time I would add more eggs because I like that part a lot! And I used coconut oil to cook it in. I think that makes a difference. I love the smell and the mild flavor it adds.
