Ingredients

  • 1 (tablespoon) minced ginger
  • 2 cloves garlic, finely minced
  • 1/4 (cup) fresh lime juice
  • 1 (teaspoon) sesame oil
  • 1 (teaspoon) honey
  • 3 (tablespoon) light soy sauce
  • 1 1/2 (pound) tilapia fillets
  • 1/4 (cup) cilantro, chopped (optional garnish)
  • 3 green onions, chopped (optional garnish)

Directions

  1. Preheat the oven to 450 degrees F. Coat a baking dish with cooking spray.
  2. Combine the ginger, garlic, lime juice, sesame oil, honey, and soy sauce in a small bowl; whisk thoroughly. Place fish in a single layer in the baking dish, allowing space between the fillets. Pour ginger-lime sauce over the fish and bake 12 to 15 minutes or until the thickest fillet flakes easily when tested with a fork. Garnish with cilantro and green onions

    @Anonymous, if you don't want to saute, your tilapia will bake beautifully if you lay the filets in a baking pan and top them with thin slices of tomato and onion, season with s/p and sprinkle with olive oil and a good splash of balsamic vinegar, also some oregano and/or basil. Just cover tightly with foil while you bake it so it stays moist.

    for the person looking for a tomato-type sauce for tilapia: saute chopped onion and bell peppers in oil over medium heat until tender. remove from skillet, add a little oil and the fish. cook until done, turning over once. add about a cup of your favorite salsa and return the cooked vegetables, cook on low for a minute or so.

    This recipe reminds me of my childhood days! We have a "dirty kitchen" at the back of the house facing the rice paddies. At some early AM my dad would go to the nearby town market and buy some fresh Tilapia! Try adding the sweet green (long ones) peppers to your your tomatoes and green onions. You can buy these peppers at any local Korean stores for pennies! Peace, good eating, and have a long life.
