Ingredients

  • 4 (4.0 ounce fillet) tilapia
  • 10 (ounce) peanuts
  • 1 (tablespoon) soy sauce
  • 2 (clove) garlic
  • 1 (tablespoon) brown sugar
  • 1 (tablespoon) olive oil
  • (to taste) black pepper

Directions

  1. Preheat your oven's broiler. Line a baking sheet with aluminum foil.
  2. Combine peanuts, soy sauce, garlic, brown sugar, olive oil, and black pepper in a food processor; blend until the mixture is the consistency of paste.
  3. Spoon a thick layer of the peanut mixture on top of each tilapia fillet. Place the fish peanut mixture-side up on the prepared baking sheet. Under the broiler, cook fish until the peanut crust is golden brown and the tilapia flakes easily, about 5 to 8 minutes.

    I wish there was a way to change the recipe down to one serving or maybe two. I know I could sit a figure it out but for those of us alone it would make it much easier.

    Hi Anonymous! We have made significant changes to our site over the past few weeks; all ultimately to improve the over all ease and functionality of the site. Adjusting the number of servings was a feature we had on the old version of the website and will be adding it back in the future. In the meantime, if you have the iphone or android app you can easily adjust the servings on a recipe to 1-8 servings and the ingredients will adjust accordingly. If you don't have the phone app (and until we get the feature added back to the website) Chef Leslie or I would be more than happy to help you adjust any recipes you may need help with. For one serving for this recipe you will need the following: 1 (6 ounce fillet) tilapia 2 1/2 (ounce) peanuts 1/4 (tablespoon) soy sauce 1/2 (clove) garlic 1/2 (tablespoon) brown sugar 1/2 (tablespoon) olive oil (to taste) black pepper Continue with recipe as directed.

    Is there a way to figure out which recipes can be made ahead and frozen? I would like to be able to do all the shopping and cooking over the weekend and simply reheat or bake dinner when I get home on weekdays.

I'll definite bring this up to everyone as something that would be helpful, but in the meantime, please either feel free to post requests on any recipe you're interested in, or otherwise, to let us know what sort of dishes you're interested in--and maybe our chefs can start up a list of of suitable recipes. Are you looking primarily for casseroles, or also for dishes where you can precook certain components and then combine them on cooking day? Certainly, many of the casseroles and slow cooker dishes, and chilis, for instance, will do very well!

    Thanks Donna and Chef Leslie. I have a 5 year old and an 18 month old so I am looking for healthy family meals which are kid-friendly, not too spicy for the kids but with the option to add the spice on the side for the adults. I don't particularly have a knack for cooking, so simple recipes would work best.

    @Anonymous- While a select number of our recipes contain nutritional data, this is not something we currently offer for all recipes on the site. However, if you do a quick internet search you will find a number of websites that provide nutritional data calculators that will allow you to plug in recipes or ingredients and will calculate the nutritional information for you. A rough estimate of the nutritional data for this recipe would be approximately 276 calories 12 carbs 19g fat and 28g protein; per serving. Please note that this is just an estimate since I am a chef not a registered dietician or nutritionist.

    Ok, I kind of have an idea how good his would be if 1. I used a food processor & not a blender & 2. I probably shouldn't have broiled it. Baking it might have been okay. I will try this again, though. Maybe even tomorrow night.
