Marinated Lemon Shrimp

Ingredients

  • 1/3 (cup) lemon juice
  • 1 (pound) medium shrimp, peeled and deveined
  • 1/2 (teaspoon) salt and freshly ground pepper
  • 1/3 (cup) vegetable oil
  • 2 (tablespoon) garlic cloves, minced

Directions

  1. In a shallow dish or resealable plastic bag, add lemon juice, shrimp, 2 tablespoons oil, and garlic. Marinate for at least 15 minutes but no more than 2 hours as the lemon juice will begin to "cook" the shrimp.
  2. Remove the shrimp from the marinade and drain lightly on paper towels. Season with salt and pepper.
  3. In a large skillet, heat 2 tablespoons of the oil until shimmering. Add half of the shrimp and stir-fry over high heat until browned on both sides and cooked through, about 3 minutes total.
  4. Transfer to a platter and repeat with the remaining oil and shrimp. Serve immediately.

    Is the oil supposed to be part of the marinade or just used to cook the shrimp in?

    Hi Sarah! I have edited this recipe to be more clear. You will want to add some of the oil to the marinade but will need some to pan cook the shrimp. Please let us know if you have any other questions.
