Ingredients

  • 4 (fillet) tilapia
  • 1/4 (cup) extra-virgin olive oil
  • 1 (12.0 ounce can) peeled tomatoes
  • 2 (clove) garlic, minced
  • 1/2 (cup) finely chopped red onion
  • 1/2 (teaspoon) dried thyme
  • 1/2 (cup) green olives, sliced
  • (to taste) salt and black pepper

Directions

  1. Preheat the oven to 400
  2. Oil lightly a shallow baking dish large enough to hold the fillets in one layer.
  3. In a bowl stir together the oil, thyme, tomatoes, olives, garlic, and onion.. In the prepared baking dish arrange the fillets, skin sides down, season them with salt, and spoon the tomato mixture over them. Bake the fish, uncovered, in the middle of the oven 15 to 20 minutes, or until it just flakes.

    A little bland for my taste...may add more seasoning next time around but it is a great low calorie meal and a wonderful way to add more veggies into my meal. A food processor makes this meal a breeze to prepare.

    Tilapia is a bland fish to start with, but I found the seasonings/tomatoes, onion, garlic to be just right with it. I did notice the ingredients list did not call for olives, but the directions did say to add the olives. So I sliced up some black pitted olives (probably about 1/4 cup). They added a nice salty touch. I also added pepper to the mixture and where it said thyme (again, not listed in the ingredients) I added a dash of poultry seasoning. I served it with spinach and cous cous. Delicious meal that I would make again.
