Ingredients

  • 1 1/2 (pound) ground beef
  • 1 (large) onion, diced
  • 1 (whole) green bell pepper, seeded and diced
  • 1 (cup) whole kernel corn, drained
  • 1/2 (cup) barbeque sauce
  • 1 (cup) can diced tomatoes, drained
  • 2 (8.5 ounce package) cornbread mix

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender. Drain excess grease, and stir in the barbeque sauce. Spread the beef mixture over the bottom of a baking dish.
  3. Prepare the cornbread batter mixes according to package directions. Spread the batter over the top of the beef mixture.
  4. Bake for 20 to 25 minutes in the preheated oven, until the top is golden brown, and a knife inserted into the center of the cornbread layer comes out clean.

    Enjoyed by everyone - could use a bit more barbeque sauce, but overall an easy and quick meal. Only used 1.5 lbs ground beef, so only needed one package of corn bread mix for a 9 x 9 pan.

    I really like the idea Andrea had, to change it to a Mexican casserole substitute salsa for bbq sauce and add a package of fajita or taco seasoning to the beef. Top with pepper jack cheese and garnish with sour cream. DELISH!

    Yum! My college roommate used to make something similar to this but added a layer of shredded cheese between the meat mixture and cornbread.

    I substituted the ground beef with ground turkey and added a turkey gravy to the mix for moisture and flavor. I may try it with a biscuit topping as well.

    There are lots of easy substitues for the picky eaters out there.

    you can substitute the cornbread with mashed potatoes and make it more like a shepherds pie.

    I loved this dish. I added quite a bit of extra BBQ sauce but it was worth it. Cornbread wasn't too much. Next time I'll dice the veggies much smaller. My family isn't a big fan of texture or vegetables so I need to accommodate. Very good recipe & very easy.

    I used 6.5 oz. packages of cornbread mix and that seemed like a nice balance. Also added more bbq sauce (just eyeballed it), and added a bit of shredded cheese to the cornbread batter. Served it with the option for people to add salsa or sour cream on top - big hit, very tasty!

  • This was really good but I would suggest adding more BBQ sauce because it dries out a bit after baking. I only used one box of Jiffy cornbread mix and it was perfect! Absolutely delicious; I would make this again.

    Absolutely add more bbq sauce! But I think the prep/cooking time is a bit underestimated or is it just because I don't cook with my gas stove at an 8? Always seems to take me longer. But very tasty!

    Think this could be cooked in a crock pot? I've seen plenty of corn bread recipes for the crock pot.... I'd love to put this together in the morning and have it be ready when we get home after a day at the beach. I hate cooking after we've been at the beach all day :)

    this was good, but needed more BBQ sauce and less cornbread. Minor adjustments, will definitely cook it again. My picky 2 year old even ate most of his plate :-)

    I used more bbq sauce and one pack of jiffy cornbread mix. I did use my 9x13 pan. It made just enough for everyone. The husband and I loved the dish. Kids on the other hand picked at it and just wanted the cornbread. Lol

    @Anonymous- I recommend if you are going to make this ahead of time, to only make the beef mixture before hand and mix up the cornbread mix right before putting it in the oven. For best results, any cake, muffin, etc. batter should be used immediately when made, because the leaveners in the cake will not react properly if refrigerated and could result in a flat cake.

    This is SO GOOD! I tweaked it a bit by adding mashed potatoes as a bottom layer. Then seasoned the beef with cumin, salt, pepper, and garlic powder. I also added black beans since I had them on hand. A new family fave :)
