Ingredients

  • 3 1/4 (cup) bow-tie pasta
  • 3 (cup) water
  • 2 (cube) vegetable bouillon
  • 1 (7.0 ounce container) pesto
  • 2 (medium) tomatoes, chopped
  • 1 (15 1/2 ounce can) cannellini beans, rinsed and drained

Directions

  1. Combine pasta, water and bouillon in large saucepan. Bring to a boil. Cook, stirring frequently, for 8 to 10 minutes or until pasta is tender and broth has reduced to about 1/2 cup; do not drain. Reduce heat to low; add pesto.
  2. Cook, stirring frequently, until sauce has reduced slightly. Stir in tomatoes and beans. Cook, stirring occasionally, until heated through. Season with ground black pepper, if desired.

    Mine ended up being super salty. And we only used 1/2 of the amount of pesto and it was plenty flavorful. I liked it a lot, but I'll be figuring ways to reduce the salt in it before I make it again. But I *will* make it again!

    @Jenni~ Hi this is Chef Heather from Food on the Table. Since there are several ingredients in this recipe that are naturally salty (the Parmesan cheese and canned beans) I would reduce the amount of bouillon cubes since they are extremely salty. I think one bouillon cube would be fine or you could even eliminate all the bouillon cubes and substitute half of the water with vegetable broth.

    I added an extra can of beans to stretch it for a family of 6. I also added red pepper flakes to add some heat. yum!

It is always nice to have a simple yet flavorful recipe like this to go to on busy nights. @Karalyn- Next time try changing this recipe up a bit and mix the pesto sauce with a small jar of prepared marinara sauce or Alfredo sauce (or make your own).

    Leticia, you could add some extra seasoning for more flavor, such as Italian seasoning, or some chopped olives or sun-dried tomatoes.

    I'm new to cooking outside my comfort zone...so, can someone please tell me what and where I can find bouillon cubes!? Thank you :-) Love this app btw!!! :-)

    Any grocery store will have bouillon cubes. Usually in the general soup area--near the broth. It's usually a small glass jar with little wrapped up "cubes" in it. Red = beef and Yellow = chicken in most cases.

    Hi Anonymous. Bouillon cubes are a compressed, flavor-concentrated cube of dehyrated meat, poultry, fish, or vegetable stock. Bouillon granules are the granular form of this and can be found in a jar and is measured by the teaspoon. Bouillon granules or cubes are usually dissolved in hot water to form broth. Both forms of these can usually be found on the canned soup isle of most grocery stores. If you have trouble finding it you could always use 3 cups vegetable or chicken broth, which is found sold in a can or box on the soup isle.

    We were not a fan of the beans paired with this dish. My 2 year old son ate up the pasta with the pesto but he and the hubby picked out the pasta and left the other stuff. I too did not think the beans did anything for this.

    We loved this. I didn't have fresh tomatoes and all that was in the cupboard was a can of diced zesty jalepeno tomatoes. I added those and carrots for the veggie. It was so good. Ii will definitely make this again.

    Very tasty!! We loved it as well. Thought of some good add ins: a bit of sliced onion, couple cloves of garlic and toasted pine nuts topped with some chopped basil. Yum.

    Changes that i made: whole wheat spiral pasta; didn't have any tomatoes, so used a bag of frozen spinach instead. Was AWESOME!!! The trick is to use good pesto, otherwise gets too salty.

    Great, but I skipped the bullion because it didn't need the extra salt/flavor. The pesto I used was salty enough.
