Lemon Pepper Chicken Tenders

Ingredients

  • 18 chicken tenders
  • 18 (6 inch) skewers
  • 2 (large) lemons, jested and juiced
  • 1/4 (cup) extra-virgin olive oil
  • (to taste) salt and black pepper

Directions

  1. Whisk together oil, lemon juice and lemon zest. Reserve 1/4 of marinade.
  2. Place tenders in a resealable plastic bag with remaining marinade. Marinate 30 minutes.
  3. Remove chicken from bag and discard marinade. Thread one tender on each skewer and season with salt and pepper.
  4. Lightly oil grate on grill. Heat the grill to medium high heat.
  5. Cook tenders on grill 3-4 minutes on each side. Transfer to a serving platter and brush with the reserved marinade.

    This is a really great dish. As long as you time the chicken cooking correctly you will have some of the best lemon pepper chicken you've ever had. This beats using store bought seasoning by a long shot.

    I baked this with chicken breasts instead of kabobs, and I used limes instead of lemons (we were out). It still turned out great. Loved the fresh clean taste of the chicken. We threw some cilantro on it, and paired it with roasted squash.

    @Anonymous- If you wanted to bake the chicken tenders, bake at 375 degrees for 15-20 minutes or until cooked through.
