Ingredients

  • 2 (tablespoon) butter
  • 1 (cup) uncooked orzo pasta
  • 1 (14.5 ounce can) chicken or vegetable broth
  • 1/2 (cup) grated Parmesan cheese
  • 2 (tablespoon) dried basil
  • 1/4 (teaspoon) salt and pepper to taste

Directions

  1. Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned.
  2. Stir in chicken stock and basil, bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.
  3. Mix in Parmesan cheese. Season with salt and pepper. Transfer to shallow bowl.

    My husband and I love this, but my daughters did not... Of course they would prefer to have mac and cheese with every meal!

    It was tasty, but my husband took forever to come to the table, so it kind of dried out while my daughter and I were waiting on him. I think it would be better served within 30 minutes of making it :)

    @Anonymous, any pasta or rice dish is better when served immediately. I suggest that you leave it in the pan, covered, off the heat. It will stay hot and not dry out that way. Place it in a serving dish just before service.

    I made this yesterday as a side dish with steak & veggie kabobs. It was very good. I agree with Chef Leslie about serving immediately. My only other suggestion would be to lower the salt. Other than that, my husband and I both loved it & will definitely make it again.

    Made this tonight for dinner and my fiancé and I both loved it! I do have to agree with Elisabeth on having too much butter, next time I will reduce the amount of butter by half. Other than that I will be making this again!

    @Diana, the purpose of the butter is to coat the orzo and to brown it. You could certainly reduce the amount of butter or even substitute extra virgin olive oil. Just be sure to have enough to coat and brown the orzo.

  • This is yummy. I followed the directions except I used half the amount of dried basil, and stirred in a tablespoon of jarred pesto. Delicious! I agree that it is best served soon after making. I think it's important to brown the orzo before adding the stock, for texture reasons (if you don't it could end up mushy).
