Thai Peanut Baked Chicken

Ingredients

  • 3 (tablespoon) thai peanut sauce
  • 1 (pound) boneless skinless chicken breast halves, cut into strips
  • 1/2 (pound) chow mein noodles
  • 3 (tablespoon) sesame seeds
  • 2 (tablespoon) all-purpose flour
  • 1/8 (teaspoon) pepper
  • Vegetable cooking spray, as needed

Directions

  1. Place peanut sauce in a shallow dish; add chicken, stirring to coat. Set aside.
  2. Place noodles in food processor, and process until ground; spoon into a large zip-top heavy-duty plastic bag. Add sesame seeds, flour, and pepper. Add chicken to bag, and discard peanut sauce. Seal bag, and shake to coat chicken.
  3. Place chicken strips on a baking sheet coated with cooking spray. Bake at 350 degrees for 20 minutes or until chicken is done.

    I accidentally forgot the flour but it still turned out wonderful! I sprayed a cooling rack with pam and placed that on a cookie sheet and the chicken was all nice and coated on both sides! This was a HIT with the family! My toddler even asked for seconds!! KEEPER

    We did this tonight, and the only thing I did differently was to zest some lime over the chicken before it went into the oven to bake. It came out beautifully! I tossed some asparagus with garlic on the panini grill and roasted some tomato in the oven at the same time, and we loved it. Will definitely do this one again.

    Very good! My husband and I enjoyed these, but my kids did not. They usually like Thai flavors, so I'm not sure what the problem was!

    Oh my gosh this is good! I have never had peanut tai sauce before. It is so good! I didn't have Chinese noodles, so I left out the flour and dredged my chicken in bread crumbs mixed with sesame seeds. Yummo! The tai sauce I used was spicy and I like it that way, but my family didn't care for the spice. Thanks for the recipe!

    Is the nutrition on this for real?! 1100 cal/serving?? Looks good, but if the nutrition is correct, it's not gonna look good on my waistline!

    Super easy to make and tastes great! I served mine with white rice and green beans. Used some extra peanut sauce for dipping the chicken.
