Lemon Grilled Chicken Breasts

Ingredients

  • 4 (medium) boneless skinless chicken breast halves
  • 1/2 (cup) lemon juice
  • 1/2 (teaspoon) onion powder
  • (to taste) salt and black pepper
  • 2 (teaspoon) dried parsley

Directions

  1. Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  2. Dip chicken in lemon juice, and sprinkle with the onion powder, black pepper, salt and parsley. Discard any remaining lemon juice.
  3. Cook on the prepared grill 10 to 15 minutes per side, or until no longer pink and juices run clear.

    @Samantha & Larry and Elizabeth~ Hi this is Chef Heather from Food on the Table. There are a couple of ways you can and a little bit of extra flavor or spice to this dish. First, I always use lemon pepper seasoning and fresh lemon zest when making lemon dishes. I think these two ingredients are key to bringing out the lemon flavor. Also you could try adding some crushed red pepper flakes or fresh herbs to add more flavor or some spice.

    I marinated chicken in a plastic bag for about 8 hours: lemon juice, lemon zest, oil, (2 to 1 ratio juice to oil) chopped onion, minced garlic, dried thyme, and S&P. Keep out some marinade to baste. Grilled about 20 minutes--fantastic and juicy!

    Marinate for 30min to 1 hour and you'll have a LOT of lemon flavor instead of just a glaze; also, the tube parsley gives you a tiny bit of salt but also is easier than shopping fresh or using dried!

    Very yummy! I read other reviews that said this was bland so I marinated for an hour or so before grilling. It ended up having a great flavor. Will definitely do again in the summer when I can use my outdoor grill.

    Hi Abigail thanks for your review and sharing your cooking tip! You are right allowing the chicken to marinate in the lemon juice mixture will intensify the flavor of this dish. You could also bake this chicken in the lemon mixture at 350 degrees for about 30 minutes. Baking it in the lemon juice will create an extremely moist chicken and will have all that lemon flavor.

    We tried this tonight and really liked the fresh lemon burst of flavor! I marinated it all afternoon in the lemon juice, some lemon zest, salt, pepper, red pepper, and a little bit of olive oil. Then I cooked it in the skillet, since my hubby was working too late to grill. Next time I'll add more pepper, but I'm very satisfied with the way it turned out this time!

    I did squash also and you could really taste the lemon. Very fresh. I broiled my meat and veggies also and it turned out very moist.

    @Aimee, whenever I serve lemon chicken I like to serve a side dish that lemon goes well with. I usually will serve asparagus, broccoli or spinach. But, I LOVE squash and that sounds really good!

    Not sure why, but the chicken caught fire! After removing the burnt skin, we put the chicken back on the grill, and basted the marinade back on. It was YUMMY! Great flavor.

    Yummy! And full of flavor :) I let the chicken marinate for a day in the lemon juice and lemon pepper seasoning. Cooked on the stove with a little evoo & green bean stir fry. Added a hint of soy and had chopped potatoes in a garlic herb sauce. Will be a regular! Thanks!
