Lemon Chicken with Oregano

Ingredients

  • 6 (5-6 ounce) chicken thighs
  • 3 (tablespoon) lemon juice
  • 2 (tablespoon) honey
  • 1 (tablespoon) olive oil
  • 3 (clove) garlic, minced
  • 2 (teaspoon) dried oregano
  • Pinch (as needed) salt and black pepper, to taste

Directions

  1. Preheat oven to 400 degrees F. Season chicken with salt and black pepper. Place the chicken in a greased 13-in. x 9-in. x 2-in. baking dish. Combine the lemon juice, honey, oil, garlic and oregano; pour over chicken.
  2. Bake, uncovered for 40 minutes or until a meat thermometer reads 180 degrees F and chicken juices run clear, basting occasionally with pan juices.

    If the honey burns you may have to turn down the oven. Add more flavor make sure you use pure honey and you add honey more than once. Make sure its fresh lemon juice and you can also add this more than once. Add extra herbs if you want for more kick. Make it come alive. This recipe is perfect for making chicken come alive lol

    This was very easy and my family loved it. The house smelled wonderful as it was cooking. I used boneless skinless thighs for ease of eating, but didn't change the cooking time. It was perfect. Will definitely do this again. Also, easily adaptable for a larger crowd. I served it with rice cooked in very diluted lemon juice and a splash of honey. Anyone have any other suggestions for a side dish I could try?

    @Kristen, I would serve this with asparagus or broccoli. Both of those veggies are terrific with lemon! You could also saute some baby spinach in a little olive oil and butter with garlic and shallots (or onions) and hit it with a dash of lemon after it wilts.

    Jan, sorry you didn't like the dish--just curious, did you also season with salt and pepper? There are always lots of other easy additions you can make to boost the flavor, like adding more herbs, or maybe some red pepper flakes. Or maybe if the garlic cloves were really on the small side, add 2 or 3 more.

    I will edit this recipe to add seasoning with salt and pepper. As a note, all food should be seasoned with a little salt and pepper prior to cooking! Taste and adjust after it's finished cooking. This will help to layer the flavors.

    My husband and I liked this recipe. I tweaked it a little (as I seem to do everything!) by using some fresh rosemary in addition to the oregano (also fresh), plus I used a little more garlic because we like garlic! Of course, used salt and pepper. I take the skin off the chicken, so I gave it a few minutes under the broiler at the end to brown the thighs up a little. I think this is a good basic recipe - we liked the slight sweetness the honey gave it. I served it with brown rice, steamed broccoli and a strawberry-spinach salad.

    Hi Laurie! Thank you for sharing your recipe and side dish suggestions! Sounds like your dinner was a huge success, strawberry spinach salads are always one of my favorites!
    As with all recipes that are a great starting place and are usually easily adaptable. If you have access to fresh herbs they will always have a stronger flavor than the dried counter parts.

    @Anonymous- Yes, you can use boneless, skinless chicken breasts for this recipe. However, chicken breasts do not take as long to cook as chicken thighs so check for the chicken breasts to be done after approximately 20 minutes (cooked to 170 degrees).
