Ingredients

  • 2 (pound) boneless, skinless chicken thighs
  • 4 (whole) potatoes, diced
  • 2 (whole) carrots, diced
  • 1 (10.75 ounce can) cream of chicken soup
  • 1/2 (cup) water

Directions

  1. Combine all ingredients in crock-pot. Cook on high for 6 hours, or on low for 8 hours.

    Rebecca, I added garlic salt and should've used a little pepper too! I'm not a big crock-pot cook, so I still have to figure out how to make the meat taste better, since I always feel it lack a little luster ;-) Marinating it might work, but then, that means that I have to think WAY too ahead of time...

    @Shanel, I agree that this is a good jumping off point. I would add thyme, pepper, a tiny bit of salt (as the soup tends to be salty) and some poultry seasoning.

    We added to it: an onion, pepper, curry powder (excelent for chicken), garlic, and some parsley. I think this one will be a staple. Thank you for the starting point. I never know how long to leave chicken in the crockpot.

    A package of dry french onion soup does the trick for adding flavor galor. Just add a little bit more water or chicken broth.

    I really liked the recipe, but ended up adding some spices. Unfortunately, this one wasn't too popular with my kids, so it will probably be awhile until I make this one again.

    LOVED this. The chicken was so tender when it was finished. Added a can of Cream of Celery soup & extra carrots and some celery. Next time, definitely preparing more and having more veggies on hand for this one. =)

    @Amy, we keep Cream of Celery soup to add to casseroles and soups...it adds so much flavor when you're in a hurry or DON'T have celery on hand!

    This is what I did- doubled the recipe since there is 7 of us, add about 2 tablespoons of Knorr Chicken Bullion Powder,subbed Campbells's Mushroom with Roasted Garlic soup. After it had cooked all day on low I made dumplings and let it cook for 25 minutes on high with the lid on.

    i added broccoli, but wouldn't suggest it. we ended up with mush, more like a thick chicken broccoli soup or stew. tasty as i added spices, onion, and garlic but all mushed together after 8 hours on low.

    Hi Keri. Broccoli is a delicate vegetable, and therefore if cooking in the crock-pot should be added only during the last 45-60 minutes of the final cooking time.

    @Anonymous- Yes, chicken breasts would work just fine for this recipe. I cook chicken breasts in the crock-pot all the time and I recommend for best results cooking on low for about 7 hours and no more than 8 1/2 hours. I also recommend adding more water or chicken broth to the crock-pot (about one cup total for this recipe) to help prevent the chicken from drying out.

    Added cilantro, chop onion , cumin and chicken bouillon and omg the cilantro gave it the best flavor :) good recipe and i love the comments and add ins from others. Made it so much better. thanks eveyone!

    This is turning into a gourmet chicken recipe. I think I will go through all the additions....and cook one with all the added ingredients, and see what it is like...but I think I will add just a touch of red pepper, I will let you all know how it is....if I live!!!
