Ingredients

  • 1/2 (cup) olive oil
  • 2 (tablespoon) Dijon mustard
  • 1 (tablespoon) fresh lemon juice
  • 1 (tablespoon) chopped garlic
  • 1 (tablespoon) chopped fresh parsley
  • 2 (pound) medium shrimp, shelled and deveined

Directions

  1. Preheat oven to 450 degrees F. Combine the olive oil, mustard, lemon juice, garlic, and parsley in a small bowl. Arrange shrimp in a single layer in a large shallow baking dish. Pour the sauce over the shrimp and gently stir the shrimp to make sure all are coated.
  2. Bake in 450 degrees F oven for 12 to 15 minutes or until the shrimp are pink, curled, and opaque. Serve immediately.

    This was so quick to put together and I put it on top of pasta. I also added salt and some red pepper for spice. It took me 20 minutes for the shrimp to be done... maybe my oven runs low.

    I was a bit skeptic, but it turned out wonderfully! I also added a little bit of salt and pepper to the sauce... and a tiny bit more lemon. In my oven it only took 5 mins. Next time I will make double the sauce just so that we can have more to pour over the pasta. Overall, delish!

    I think I might make this tonight. Amanda - maybe if you bought pre-cooked shrimp it wouldn't take as long? I have some frozen cooked shrimp that I will probably just run under warm water right beforehand.

    Ann Marie - I used raw shrimp and it only took 5 mins. I think it depends on the oven. It was so good my stepson got home from school today asking if we had any leftovers. :-)
