Ingredients

  • 3/4 (pound) pork sausage
  • 1 (large) onion, sliced
  • 1 (clove) garlic, minced
  • 2 (tablespoon) extra virgin olive oil
  • 1 (pound) fresh green beans, cut into 2 inch pieces

Directions

  1. Remove casing from sausage. Heat large skillet over medium-high heat. Crumble sausage into pan and cook until no longer pink; drain and set aside. In the same pan, saute onion and garlic in oil until tender. Stir in beans; cover and cook over medium heat until beans are tender. Return reserved sausage to the skillet and; continue cooking until heated through. Serve.

    @Dawn, 1 pound of fresh raw green beans has 16 grams of fiber. So this recipe should have approximately 4 grams of fiber per serving.
