Ingredients

  • 3/4 (pound) pork sausage
  • 1 (large) onion, sliced
  • 1 (clove) garlic, minced
  • 2 (tablespoon) extra virgin olive oil
  • 1 (pound) fresh green beans, cut into 2 inch pieces

Directions

  1. Remove casing from sausage. Heat large skillet over medium-high heat. Crumble sausage into pan and cook until no longer pink; drain and set aside. In the same pan, saute onion and garlic in oil until tender. Stir in beans; cover and cook over medium heat until beans are tender. Return reserved sausage to the skillet and; continue cooking until heated through. Serve.

    How can there be zero fiber if each serving has 1/4 pound of green beans?

    @Dawn, 1 pound of fresh raw green beans has 16 grams of fiber. So this recipe should have approximately 4 grams of fiber per serving.

    Had this last night, good but didn't wow me. Different way in eating green beans though. Felt the need to add some salt at the end though

    I had fresh okra on hand, so substituted that for green beans. It was really good! The kids didn't care much for it, but they typically turn their noses up at anything green. ;)
