Ingredients
- 1 1/2 (pound) orange roughy
- 2 (cup) water
- 3 (large) lemons, 1 cut into wedges and 2 juiced
- 1 (small) onion, thinly sliced
- 1 (teaspoon) salt
- 3 (whole) black peppercorns
- 2 (tablespoon) fresh parsley, chopped
- 1 (whole) bay leaf
Directions
- Combine water, lemon juice, onion, salt, peppercorns, parsley, and bay leaf in a skillet and bring to a boil. Reduce heat. Place fish in a single layer in simmering liquid. Cover and simmer 8 to 10 minutes or until fish flakes easily when tested with a fork. Carefully remove fish from poaching liquid. Serve with lemon wedges.
