Chicken Breasts with Lime Sauce

Ingredients

  • 4 boneless skinless chicken breast halves - pounded to 1/4 inch thickness
  • 1 egg, beaten
  • 2/3 (cup) bread crumbs
  • 2 (tablespoon) olive oil
  • 1 (lime) lime, juiced
  • 6 (tablespoon) butter
  • Pinch salt and pepper, to taste

Directions

  1. Coat chicken breasts with egg, and dip in bread crumbs that have been seasoned with salt and pepper. Place on a wire rack, and allow to dry for about 10 minutes.
  2. Heat olive oil in a large skillet over medium heat. Place chicken into the skillet, and fry for 3 to 5 minutes on each side. Remove to a platter, and keep warm.
  3. Drain grease from the skillet, and squeeze in lime juice. Note: you may add a little wine or chicken stock for less lime flavor. Cook over low heat until it boils. Add butter, and stir until melted. Season with chives and dill. Spoon sauce over chicken, and serve immediately.

    I cut back on the butter when I made this - I halved the recipe but used one tbsp of butter plus one tbsp oil during frying, then one tbsp to make the lime butter. I also only had seasoned Italian breadcrumbs, but added a little cumin to it for breading. It came out really tasty, but I felt like it was missing something. I was left wanting a little more depth of flavor, so maybe I'll use more cumin next time.

    Very tasty, a little limey, but still good I think next time I'll sub some white wine for half the lime juice.

    Kevin, you should season the bread crumbs with salt and pepper before you bread it. I will change the recipe to reflect this. I also always lightly season after it comes out of the pan (as you would french fries). Andrea, wine would work really well with this. So would chicken stock.
