What can you substitute for Cajun seasoning? I imagine you could use taco seasoning, chili powder, etc?

@Ann Marie~ Hi this is Chef Heather from Food on the Table. If you have a basic spice rack, chances are you have everything you need to make your own Cajun Seasoning! Below is a basic recipe for Cajun Seasoning. You may see recipes with slightly different ingredients or measurements (and that all depends on the person) but this a good standard recipe. Also just for your information Cajun Seasoning is the same as Creole Seasoning, that way if you are buying it premade at the store you know it is the same thing!

    1 teaspoon dried oregano

Mix all ingredients together. Store in an air tight container in a cool dark place.

@Anonymous, here's another good shrimp recipe to serve with greens: http://www.foodonthetable.com/recipes/9382-cajun-seafood-pasta @Ann Marie, you could use pre-cooked shrimp. I would make the sauce in a saucepot over low heat and add the pre-cooked shrimp. Heat until the shrimp is heated through. You don't want the shrimp to be over-cooked though, so I'd let it warm up to room temp before adding it.

Central Market is a great place to buy spices in bulk! They are always fresh because they have a high turnover and don't sit there for long. You can buy the spices you need and just refill your spice jars for about $0.25 instead of spending $3-5 dollars on a jar of spices in the spice aisle. Great money saving tip!

What kind of sauce can I use with rice for this dish... I don't want to use the marinade since it has a lot of oil in it

Hi Reunna! You could simply serve this on a bed of rice with a side of fresh lemon wedges. Another option would be to make a sauce out of the same ingredients in the marinade and omit or reduce the oil or use 2-3 tablespoons butter or use some seafood stock or white wine instead (or a combination of stock, wine and butter).
