Ingredients

  • 1 (pound) bulk pork sausage, browned and drained
  • 1 (cup) mozzarella or cheddar cheese, shredded
  • 2 (large) tomatoes, or 1-14.5 ounce can diced tomatoes, drained
  • 1 (medium) green bell pepper, seeded and sliced
  • 1 (medium) onion, sliced into rings and separated
  • 1 (medium) zucchini, peeled and sliced
  • 1/4 (cup) parmesan cheese, grated

Directions

  1. Place ingredients in order given, as for pizza, in a 3 quart casserole dish. Sprinkle with Parmesan cheese. Cover and bake at 350 degrees, for 1 hour, or until zucchini is fork tender. Serve.

    We totally loved this dish. The mixture of everything made for great flavor and texture. One thing I would recommend is that if you are using fresh tomato and the zucchini you should squeeze out some of the liquid in the zucchini before cooking. There was a lot of liquid when done and it needed to be immediately drained into another dish to put away so it did not get all soft for leftovers.

    I really liked the flavor combinations with this recipe. Unfortunately the rest of my family didn't feel the same and my 10 year old who loves every ingredient in it refused to eat it. Everyone else had a very much take it or leave it approach. The tomatoes did leave things a little soupy in the bottom of dish. I used canned and REALLY drained them well, maybe fresh would leave less liquid. If it were just me I would definitely make again. However i'm surrounded by picky eaters so this one will have to get shelved.

    Well, my husband and I enjoyed this dish. I served it with white rice. The kids said it was ok but would of been better without the tomatoes. PICKY kids!

    This was REALLY good! Used hot sausage cause we like things spicy! I think adding a little minced garlic or garlic powder to it would really bring out the flavor more. We added garlic powder after it was cooked and it was good! I'd like more tomatoes, too, i think. I always kind of tweak these recipes to our tastes anyway! I'm Cajun & my husband's Italian, so we like spice!

    It just means to layer them. So, put the sausage in the dish, then the cheese, etc. down the list.
