Ingredients

  • 1 (pound) large shrimp, peeled and deveined
  • 4 (tablespoon) lemon juice
  • 1/2 (cup) olive oil
  • 1/2 (cup) chopped fresh parsley, divided
  • 3 (clove) garlic, minced
  • 1 (cup) bread crumbs
  • 2 (teaspoon) paprika

Directions

  1. Butterfly shrimp but don't cut all the way through. Spread and flatten. Preheat oven to 400 degrees F. Place shrimps in a 9x13 baking dish coated in cooking spray.
  2. Sprinkle with lemon juice. Combine olive oil, 1/2 of the parsley and garlic in a bowl. Place some of the mixture on each shrimp. Combine breadcrumbs, remaining parsley and paprika and place some on each shrimp.
  3. Bake in preheated oven for 10-15 minutes.

    Tallon - I'm not sure what you are saying; I look at the recipe and see 3 steps following the ingredients. What do you see? Also, Mark, you could add minced garlic and diced tomato and some heavy cream and get a creamy tomatoey scampi kind of dish that my family really grooved.
