Ingredients
- 1 (pound) Italian Sausage
- 2 (14.5 ounce can) diced italian tomatoes
- 2 (14.5 ounce can) beef broth
- 1 (15.0 ounce can) red kidney beans, drained and rinsed
- 1 (16.0 ounce package) frozen mixed vegetables
- 1/4 (cup) Parmesan cheese
Directions
- In a large pot, crumble and cook sausage over medium heat until browned; drain off excess fat. Add tomatoes, beef broth, beans, and frozen vegetables. Bring to a boil. Reduce heat to low and simmer. Cook 7 to 10 minutes or until vegetables are tender, stirring occasionally. Garnish with parmesan cheese.
