Ingredients

  • 1 (pound) Italian Sausage
  • 2 (14.5 ounce can) diced italian tomatoes
  • 2 (14.5 ounce can) beef broth
  • 1 (15.0 ounce can) red kidney beans, drained and rinsed
  • 1 (16.0 ounce package) frozen mixed vegetables
  • 1/4 (cup) Parmesan cheese

Directions

  1. In a large pot, crumble and cook sausage over medium heat until browned; drain off excess fat. Add tomatoes, beef broth, beans, and frozen vegetables. Bring to a boil. Reduce heat to low and simmer. Cook 7 to 10 minutes or until vegetables are tender, stirring occasionally. Garnish with parmesan cheese.

    Everyone loved this. Even my 12 year old asked to bring it in his thermos for lunch at school. Very flavorful and hearty. I will make it again once the weather gets cold.
