Ingredients

  • 1 (2 to 3 pound) chicken, cut into 8 pieces
  • 1 (medium) onion, chopped
  • 1/2 (teaspoon) celery seed
  • 1 (whole) bay leaf
  • 1 (12.0 ounce can or bottle) Coca Cola
  • (to taste) salt and black pepper

Directions

  1. Place onion in bottom of crock pot. Add chicken and remaining ingredients. Stir once. Cook on low 7-8 hours. Remove chicken from bones and remove bay leaf. Serve chicken over rice.

    2 very enthusiastic thumbs up from me and my kids! It couldn't be easier. We love onions in our house, so I doubled the onion to add vegetables to the dish. I haven't served it as part of a meal yet, but could be great with rice or mashed potatoes (we are gluten free). Thank you!!!!

    @Rossele, you could substitute 1/2 t. dill seed or 1 tablespoon of minced celery tops or celery.

    We also went without the celery seed because I thought I may have it, but didn't. I am sure it is better with it, but fine without it, too! :)

    @Anonymous, you certainly could use boneless chicken breasts. Just reduce the cook time to around 5-6 hours on low or it will be too dry. I really recommend using bone-in chicken when possible as it adds a ton of flavor and will help to keep the chicken from drying out.

    @Gabriella, I don't think it would be as good because it's the sugar in the cola that caramelizes and adds all the flavor.

    Do NOT use any cola that is sweetened with NutraSweet (Aspartame) in any recipe. Free methanol is created from aspartame when it is heated to above 86 Fahrenheit (30 Centigrade). This would occur when aspartame-containing product is improperly stored or when it is heated. Methanol is basically - wood alcohol. Methanol breaks down into formic acid and formaldehyde in the body. Formaldehyde is a deadly neurotoxin. Items sweetened with Splenda (or sucralose) are a better bet. Splenda is exceptionally heat-stable. But really, you best bet s to use items that are sweetened with the more naturally occurring sugars; ie. cane. Today, you need to be chemist as well as a cook.

    And you know, I was thinking about this since my post. I personally avoid diet drinks. I was warned my my chem teacher against Aspartame when it first came out in the early 80s. But being that this information has come out regarding the reaction that occurs to this chemical when stored or cooked with at temps above 86 F it really makes me wonder. Delivery trucks used for these drinks are not temperature controlled and nor are storage facilities many times. Unless the makers can guaranteed that their products are never exposed to these temperatures, you, as the consumer, have no assurance that you are not slowly poisoning yourself.

    In fact, I go out of my way to only purchase sweetened drinks (on the occasion that I buy them, that are only sweetened with cane products. No artificial sweeteners and no HFCS.

    Thanks for sharing your feedback and side dish suggestions Maricelda. I recommend if you wanted a "more natural" sweet chicken recipe to eliminate the cola in this recipe and add 1/2 cup brown sugar or 1/3 cup maple syrup and 1 cup chicken broth. Continue with the recipe as directed. Another 'sweet' tasting chicken recipe to try is this Pineapple Chicken Tenders: (http://www.foodonthetable.com/recipes/38246-pineapple-chicken-tenders). You could even make this pineapple chicken recipe in the crock-pot by combining all ingredients and letting cook on high for 4-5 hours or on low for 7-8 hours.
